Ingredients
- 2 cups cucumbers, diced
- 1 cup tomatoes, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup orange bell pepper, diced
- 1/4 cup red onion, diced
- 1 15ounce can chickpeas, rinsed and drained
- 1/2 cup feta cheese, crumbled
- 1 lemon, juiced
- 1 Tbsp olive oil
- Salt and pepper, to taste
- 1 bag of Simply 7 Sea Salt Lentil Chips
Directions
1. Combine all the ingredients in a large bowl except feta and Lentil Chips.
2. Place in fridge for 20 minutes.
3. Remove from fridge, add feta and enjoy with Lentil Chips!
