Summer Avocado Hummus

Ingredients
  • 3 ripe avocados, halved and pits removed
  • 15oz canned chickpeas, drained and rinsed
  • 3 Tbsp olive oil
  • 2 garlic cloves, peeled
  • Juice of 1 lime
  • Salt, to taste
  • 1/4 cup sweet corn, fresh or canned, for topping
  • 2-5 mandarin orange slices, for topping
  • A few radish slices, for topping
  • A handful of salted pepitas, for topping
  • Parsley, chopped, for topping
  • 1 bag of Simply 7 Sea Salt Lentil Chips, for serving
Directions

1. In a food processor, blend together all ingredients besides the topping ingredients.
2. Once blended, add your toppings and serve with Sea Salt Lentil Chips!
