Cook Time:15 minutes
- 3 ripe avocados, halved and pits removed
- 15oz canned chickpeas, drained and rinsed
- 3 Tbsp olive oil
- 2 garlic cloves, peeled
- Juice of 1 lime
- Salt, to taste
- 1/4 cup sweet corn, fresh or canned, for topping
- 2-5 mandarin orange slices, for topping
- A few radish slices, for topping
- A handful of salted pepitas, for topping
- Parsley, chopped, for topping
- 1 bag of Simply 7 Sea Salt Lentil Chips, for serving
1. In a food processor, blend together all ingredients besides the topping ingredients.
2. Once blended, add your toppings and serve with Sea Salt Lentil Chips!
