Superfood Rice Bowl

  • 1 serving brown rice, cooked
  • 5-6 shrimp, grilled
  • 1 cup kale, finely shredded
  • 1 half avocado, sliced
  • 1/2 cup tomatoes, diced
  • 1/2 cup carrots, finely shredded
  • 1/4 cup red onion
  • 1/4 cup cucumber, diced
  • 1 lemon, juiced
  • Salt & pepper, to taste
  • 1 bag Simply 7 Organic Original Veggie Chips, on the side

1. Cook your favorite brown rice per the package instructions.
2. Coat the shrimp in salt and pepper cook in your desired method – grill, in the oven, on the stove top.
3. Prepare your veggies while the brown rice and shrimp are cooking.
4. Once the brown rice is finished cooking, add to a large bowl.
5. Top the brown rice with the veggies, shrimp and add your lemon and salt & pepper.
6. Enjoy with Organic Original Veggie Chips!
